Preparing a traditional Turkey Dinner in a warm sunny paradise can be challenging if you want everything to taste like ¨Back Home¨ but…………..if you are ready to step out of the box, your Christmas spread will be one none of your guests will forget.
How to find a turkey? Most of the larger chain grocery stores in Puerto Vallarta sell frozen or already cooked Turkey. Large smoked hams are also available. Prices are very consistent so don’t waste precious beach time comparison shopping, just buy the one that appeals to you along with dressings and get back to fun asap.
Some people like to soak their turkey in brine a day or two before cooking. A trick that we found deliciously useful is marinating your turkey in Raicilla, Tequila or Mezcal. Let your turkey get a bit of a buzz before the big day and you will be surprised how tender and moist your bird can be.
For the stuffing. Don´t forget to fully clean and empty the inside of your turkey. Nothing like finding a baked bag of giblets when you are excited to get down and dirty with your gravy making.
Don’t ruin your day searching for cranberry sauce that you might not find…………….try using mango, papaya or another tropical fruit and make chutney. Your guests will be most impressed.
Don´t stick to the books when it comes to your sides. You might find beans, brussel sprouts, broccoli, but if they are not in good shape try making a puree of chayote (Mexican vegetable) coliflour or potatoes with garlic. These whip up beautifully and taste delicious with your gravy.
Stuffing. You will find thyme, celery, parsley and can cube your bread but breakfast sausage is tough to find, so just go without. Stuffing will still be delicious if drenched in gravy.
Gravy is saved for last because who doesn’t LOVE making a gravy. Use the vegetable water mixed with flour and add some finely chopped onion seasoning salt and sauté until beautiful brown. Now here’s a trick……….deglaze your gravy with Raicilla or Tequila.
If you have your pet with you make sure not to let him/her get into the bones. Turkey bones are shattering and be lethal. Treat your animals to the giblets and cooked meat.
Your meal will be memorable! If you hate to waste……………make a turkey soup right after dinner using the whole turkey carcass and vegetable cuttings and a bit of chicken knorr suisa and boil for an eternity while you are still partying so you have hang over food ready for the next day and remember…………FELIZ NAVIDAD!
