Shrimp 101

New to Mexico? Love seafood?

The way you can prepare shrimp is so diverse.  Here are a few tips on how to know your menu when ordering or preparingshrimp.

Here are a few favourite recipes:

Aguachile.   This is a coastal favourite.  Raw shrimp marinated in lime which actually breaks down the enzymes cooking the shrimp to pink happiness. Chefs add cucumber and habanero Chile and it is served with crispy tortilla chips or saltine crackers.  Delicious!

Al ajillo. Pan fried shrimp with rings of woody flavoured rich guajillo Chile and garlic

A la diabla.  Shrimp cooked in a spiced tomato sauce.

Al ajo. Fried in butter and garlic.

A la parilla.  Grilled to perfection.

These dishes above are usually served with rice and veggies.

Cocktail de camarón.  Most people are used to a shrimp  cocktail served with a red dipping horse radish sauce.  But in Mexico some shrimp cocktails are served cold or hot with a seafood broth topped with cucumber and Mexican salsa Mexicana (tomatoes,onions, cilantro lime). Tip* Loads of lime can be squeezed in this concoction for a tangy delight.

Shrimp sizes vary and bigger is not always best. Smaller shrimp tend to be sweeter!
